Bacon Wrapped Meatloaf – A Foodie Love Story
You know when you’re surfing through Pinterest and that 1 foodie pic makes you start to drool? Well, that happened. Because Bacon Wrapped Meatloaf!! Why had I never thought of this? My husband makes the best meatloaf around. Even Ethan loves it, which right there says everything. But then, someone, and by someone I mean a super genius, added a bacon blanket to lovingly tuck it in. Angels started singing, harps started playing that glory music, (all in my head, I’m sure no one else heard it, sadly) my tummy rumbled. I may have shed a tear. I would finally be all super mom of the year award winner and make my family adore me with this holy bacon wrapped meatloaf! In fact, I would go 1 step above plain bacon wrapped meatloaf and serve candied bacon wrapped meatloaf! Do you hear those harps and angels yet? You will, watch!
Bacon Wrapped Meatloaf Recipe
INGREDIENTS:
For Meatloaf –
- 2 lbs Ground Chuck Roast (93/7)
- 12 Slices of THICK Bacon
- 1 Medium Egg (beaten)
- 1 TSP Onion Powder
- ¼ TSP Garlic Powder
- 1 TSP Salt
- 1/2 TSP Pepper
- ½ Cup BBQ Sauce (pick your favorite kind!)
- ¼ Cup Worcester Sauce
- 1 1/2 Cups Bread Crumbs
For Brown Sugar Glaze –
- ¼ Cup Brown Sugar
- Splash of Water
DIRECTIONS:
To start our holy grail bacon wrapped meatloaf, preheat oven to *325. Mix all meatloaf ingredients in large bowl except bacon. I take my ring off and really get in there good with my hands. Make sure it well incorporated! Form into loaf and set aside.
To make your bacon weave cozy blanket thingy, lay out 6 slices (side by side) on wax paper. Just like basket weaving at Summer camp – Fold every other slice in half and lay another slice over crosswise. Fold those three back, and fold the other three back and lay another slice across. Repeat to complete the weave. (sorry, pinners, I know that one is not oh so puuurty)
Place your meatloaf loaf into the center of it’s nice cozy bacon weaved blankie. Wrap the bacon up and around the loaf. Flip upside down and place it in a loaf pan. Do not grease the pan! There will be plenty of bacon drippings to allow it to pop right out! Cover with foil. Bake for 1 hour. Bump up the oven temperature to *350. Uncover your loaf, and bake for another 30 minutes.
Make the brown sugar glaze by dissolving ¼ cup of brown sugar in just enough warm water to make a slurry. Drain your meatloaf pan of any grease. Cover the bacon weaved blankie with brown sugar mixture. Bake another 5-10 minutes so it crisps up.
Sorry all my vegetarian/vegan/PETA lovers, but it’s time to dig in to this gift of meaty goodness. I mean, (say it slow) Bacon Wrapped Meatloaf!!!
