Baja Fish Taco Bowls
The first time I had a Baja Fish Taco was when I was in the O.C visiting my dad. A real legit kind, not the fish-stick on a tortilla kind. There was no going back. Growing up in Chicago, I had some food bars set pretty high. Baja Fish Taco, apparently not 1 of them. Fish sticks? Really, what were we thinking? I had some Tilapia fillets I bought on sale, done! But, I didn’t have tortillas. That would be my life story. My husband suggested using rice and making 1 of those ‘bowl thingys’ (his words) he gets when we go out for sushi. Where I eat sushi and he eats a ‘bowl thingy’. And, the Baja Fish Taco Bowl was born! Here’s what you’ll need…
Baja Fish Taco Bowl Recipe
INGREDIENTS:
- 3 Tilapia Fillets (or other light fish)
- 1 TBS Chili Powder
- 1 TBS Cumin
- 1/2 TSP Red Pepper Flakes
- 2 Cloves Garlic (minced)
- 1 Cup Corn (I used frozen)
- 1 Small Red Onion (diced)
- 1/2 Cup Red Pepper (diced)
- 1 Can Black Beans (drained)
- Cooked Rice (I used brown, white is fine)
- Fresh Cilantro For Garnish
DIRECTIONS:
Grab your favorite mixing bowl and toss all the spices in and give them a good whisk to combine. 1 at a time, dunk each fillet in and coat both sides well. I mean really give them a good Baja Fish Taco kind of coating too!! 😉 Start your rice cooking according to package directions.
Put 2 TBS of olive oil in a large skillet and warm it up. Toss in garlic and give that about 1 minute to heat up before adding the fish fillets. Cook fish on each side for 3-4 minutes. Fish is done when it is white all the way through and flakes apart easily with a fork. Remove fish and set aside. In the same pan, add corn, red pepper, and onion. Cook for about 10 minutes stirring occasionally. Add black beans and incorporate well. Continue to heat until everything is nice and hot. In a shallow bowl, layer rice, veggie and bean mixture and now top with flaked fish. Top with cilantro. I added some sour cream as well. And that my friends is a Baja Fish Taco Bowl (thingy) Enjoy with my awesome Watermelon Margarita and you have an super Fiesta going on!
