Tart & Tangy Spinach Salad A Perfect Summer Salad Ideas
Let’s be honest, with warm weather coming, we don’t want to be heating up the kitchen cooking. But, we still want to feed the fam good, healthy foods and not spend tons of cash eating out, right? That’s where a Summer Salad fits perfectly into the picture. I try to mix different greens with some fruit to keep things interesting around here. Today, I have this great Summer salad made with spinach, feta, toasted corn and… wait for it…. dried cherries! I know, right!! It was really east too. I whipped up some homemade balsamic dressing and Boom. Dinner was done! Let’s get our greens on!
Balsamic Dressing For Summer Salad
This is my go-to balsamic recipe for any Summer salad. Feel free to add and experiment with different spices.
- 1/4 Cup Balsamic Vinegar
- 1 TSP Brown Sugar
- 1 Clove Garlic (minced)
- 1/2 TSP Salt
- 1/2 TSP Pepper
- 3/4 Quality Olive Oil
In a medium bowl, whisk all ingredients save for the oil. Gradually add the oil and continue whisking until well incorporated. And, you’re ready to pour over any Summer salad that gets raves at your house!
Tart & Tangy Spinach & Feta Summer Salad
My original plan was to use pomegranate seeds. But, guess what? Right! Out of season and after stopping at 4 different stores, I gave up the hunt. For this Summer salad, I improvised. Ethan loves craisins and I found some cherries and thought, why not. Where’s what I ended up with.
- 6 Cups Mixed Greens (I included spinach!)
- 1/2 Cup Dried Cherries
- 1/2 Cup Feta Cheese (crumbled)
- 1/2 Cup Grilled Corn (shaved off cob)
I grilled a couple ears of corn and then shaved them. There’s something about grilled corn in the summer that just seems… right. Ya know? Toss all the ingredients in a large bowl. Top with a good Balsamic dressing and crumble feta cheese on top! This summer salad is perfect for BBQ’s, easy week night dinners or make a great grilled chicken dinner and serve on the side!
