Sweet & Spicy Caribbean Chicken Legs Recipe
So, by now you’ve noticed I’ve been trying to ‘lighten things up’ over here. Eat a bit healthier and all that? But I’m out to prove that eating better doesn’t mean eating cardboard. How am I doing? I know right!! Good, glad I can help! So, this week all we see on TV are the March Madness crazies in Vegas. Personally, I’m thinking ahead to what I can pop on my grill. It’s been in the *80’s here quite a bit. Pretty soon, my oven will shut down for the Summer. And that BBQ will be working overtime! My husband found this Sweet & Spicy Caribbean Chicken on Feastie.com. I played with it a smidgeon because I like a bit more kick. So, that makes this Rum Glazed Chicken Legs Recipe perfect for those looking for heart healthy, easy family meals AND all you sports lovin,’ game day peeps!! Win / Win, my friends! Let’s get to cooking!
Sweet & Spicy Caribbean Chicken Legs Recipe
Ingredients:
3LBS Chicken Legs
2 Green Onions (chopped)
1/4 Cup Captain Morgan Spiced Rum
3 TBS Agave Nectar
1 TBS Corn Oil
2 TBS Cider Vinegar
2 TBS Soy Sauce
1 Fresh Squeezed Orange (juice)
1 Fresh Squeezed Lime (juice)
2 TBS Brown Sugar
2 TSP Garlic (I used paste)
2 TSP Ginger (I used paste)
1 TSP Lemongrass (I used paste)
1 Habañero Chile (chopped fine, seeded if you don’t want heat)
1 TSP Thyme
1/4 TSP Fennel
Dash of Salt & Pepper
Directions:
This could not be any easier! Place all of the ingredients except for chicken and green onions for the marinade in processor or even your blender and pulse away until smooth. Now, pour the whole kit and caboodle in a gallon-sized zippered bag. Add chicken legs, seal it on up, give it a good ‘squish around’ and place in refrigerator for a good 6 hours. Now, take a nap. Ok fine, do some laundry? Watch TV!! Or, if you work outside the home you better scoot before you’re late!
How was your day? Ready to cook these babies? Set oven to *400. Drizzle Corn Oil over a cookie pan and line up your marinated legs. Pop those in the oven until they are completely done, about 30-35 minutes. While they are baking up, pour marinade in heavy bottom saucepan and warm that up! We are not letting all that sweet & spicy goodness go to waste! Just as the chicken legs recipe is done, brush with a nice coating of warmed up marinade and pop back in the oven for 5(ish) minutes. This is where boys turn into men… If you’re like me and want a bit more kick, squeeze a few drops of Srisracha Sauce on a couple as well! YUM!

I made this for dinner last night using boneless, skinless thighs as that’s what I had defrosted. Super delicious. My son who is very picky loved it!
