The Cupcake Project: Orange Cranberry Cupcakes With White Chocolate Ganache
This week’s edition of The Cupcake Project is right at the beginning of the most awesome-est time of the year you guys! Holiday Baking Time! Huzzah!! Let’s kick things off with one of the ultimate signs of all things holiday-ish. Cranberry Cupcakes! I stuck some orange into these bad boys and included some white chocolate ganache too. I know! All kinds of deliciousness going on! I’m going to post my recipe for homemade cranberry sauce too this week so you don’t need to run out and buy that awful can. Blech. But, let’s get back on track. Who’s ready to kick off holiday baking with these cranberry cupcakes?? Are ya with me? Let’s go…
Orange Cranberry Cupcakes
Ingredients
- 1 Box White Cake Mix
- 2 Egg Whites
- 2 Eggs
- 1/3 Cup Oil
- 3/4 Cup Buttermilk
- 1/2 Cup Sour Cream
- Zest Of 1 Orange
- 2 Cups Cranberries (chopped)
- 1 Cup White Chocolate Chips
- 3 TBS Heavy Whiping Cream
- 8 oz Cream Cheese (softened)
- 1/2 Cup Butter (softened)
- 2 TBS White Chocolate Instant Pudding
- 1 TSP Vanilla
- 3-4 Cups Powdered Sugar
Instructions
Let's get started with our Cranberry Cupcakes by preheating the oven to 350*. Line pans with cupcake liners. (This recipe will make 24 homemade cupcakes)
In large mixing bowl, mix egg whites, eggs, oil, buttermilk, sour cream and vanilla on low speed.
Slowly add cake mix and blend until it's smooth and lump free. Remember, lumps are yucky! Fold in chopped cranberries and zest orange directly into bowl. Stir really good, 1 last time!
Use a food scoop to pour batter into cupcake liners. Less mess, no guess! Fill your liners 3/4 full. Depending on your oven, bake for 17-22 minutes. I was right at 20 minutes. Use the old but never fail 'toothpick comes out clean' trick to test yours. Set those aside on cooling rack. And, while they are cooling off, we're going to start on the ganache.
Melt white chocolate and cream together in a double boiler or pop them in the microwave. I took the microwave route. Easy, peasy. Be careful, white chocolate burns easily! You want a nice thick creamy mixture.
Dip cooled cupcakes in ganache. Let them set before frosting.
Beat together your cream cheese and butter. Add pudding and vanilla. Slowly start adding powdered sugar until you reach the consistency you're aiming for to pipe frosting. Too thick? Add 1 TBS of milk at a time. Too runny? Thicken with 2 TBS powdered sugar.
Pipe onto cupcakes and top with super cute sprinkles!

Week 6 I made these Uh.Maze.Ing White Chocolate and Blackberry Cupcakes. Oh.My.Lanta! Just go check out the photo and tell me you don’t want to make them! Gorgeous!
Week 7 was the sweet and tart Lemon Lime Cupcakes. Did you bake them up?
Week 8 was Orange White Chocolate Cupcakes! Add some black sprinkles and you have anotherHalloween Dessert idea!
Week 9 was the Uh.Maze.Ing Caramel Apple Cupcakes that have literally taken off on Pinterest!

These look divine! I see that you adapted it slightly from the original Your Cup of Cake recipe. Any reason why you added the extra egg? How did it affect the texture/density of the cake? Thanks!

I also noticed the recipe was different from what she has on her website!! I used he recipe directly from the book (the link to it is in the post above) I’m not sure why she has 2 different versions. But the 1 I made was perfect! Perhaps, when she went to print, she adjusted her original recipe??
