Sweet and Spicy BBQ Chicken Sandwich Recipe with Mango Salsa
When Tyson asked me to create a recipe using their Honey BBQ Chicken Strips, I immediately knew what it would be! I wasn’t quite sure how close to the original it would turn out, but I knew for sure I was going to try and recreate a Sweet and Spicy BBQ Chicken Sandwich Recipe from one of my all time favorite mom & pop spots in Chicago. Growing up in Chicago, you develop a great love for food. And sports! And often, the two combine to form great memories and great family meals.
This weekend I got to watch my beloved Chicago Cubs play the Texas Rangers in a Spring Training game here in Vegas. Some of my greatest memories are sitting in the bleachers (AKA – The Cheap Seats) at Wrigley Field with my dad cheering on our Cubbies. Yes, of course there’s that ‘other’ team too. But for us, it was and still is The Cubs. After every game we’d head over to this little mom & pop restaurant to eat. A true ‘Burger & Sandwich‘ joint. I want to pull out my burger recipes closer to grilling season but I was still all wrapped up in the moment and memories when the game ended (Cubs won!) So I headed over to Walmart to grab everything for the best Chicken Sandwich Recipe to celebrate our win and keep those memories going. Check out my whole shopping trip in this Google + Album. Since I was at the game and couldn’t cook the chicken from scratch, Tyson really came in handy for this! We call this the ‘1/2 home made method’! Grab some pepper jack cheese and ciabiatta bread, make up some easy mango salsa and baby, you got one heck of a Chicago Style Sweet & Spicy BBQ Chicken Sandwich Recipe right there! Sweet & Spicy BBQ Chicken Sandwich
Ingredients: (Mango Salsa)
- 1 Mango (peeled, seeded, chopped)
- 1 Small Red Bell Pepper (chopped)
- 1 Jalapeno Pepper (finely chopped)
- 2 TBSP Lime Juice
- 2 TBSP Lemon Juice
- Dash Crushed Red Pepper
Directions:
In medium bowl, mix all ingredients well. Be sure to thoroughly incorporate juices. Some people like to add a bit of cilantro and even fresh chopped garlic. Feel free to adjust this recipe to your tastes! Cover and set in refrigerator for 30 minutes. While that is chilling in fridge, place Tyson Honey BBQ Chicken Strips on foil covered baking sheet and cook for 15-20 minutes on 400*. Ours took closer to the 15 minute mark, but all ovens can vary.
Remove chicken from oven. Slice and place on bottom side of ciabiatta bun. Cover with a slice of pepper jack cheese and return to oven just until cheese melts. Place mango salsa on top side of bun and assemble sandwich! While the chicken was cooking we also baked some fries up in the oven at the same time and by the time our Chicken Sandwich’s were ready to eat, they were nice and toasty ready!
I really came so close to getting this recreation perfect! Were did I go wrong? Ambiance! There’s just something about that mom & pop place that I couldn’t do at home. But, you know what I realized? Everyone loved them and we were able to take this fun recipe and make an all new family meal to have while we create new memories watching my Cubs go all the way this year! What? It could totally happen!
