The Cupcake Project: Strawberry Pink Lemonade Cupcakes Homemade Cupcake Recipe
These sweet little Strawberry Pink Lemonade Cupcakes are what we’ve baked up for week 4 of The Cupcake Project. I have to say, they are the prettiest homemade cupcake recipe I have ever made! For real! Light and fluffy yellow lemon cupcake with smooth, creamy pink lemonade frosting! Melt in your mouth yum! We decorated them with opaque pearls and that sparkly, glittery sprinkles… topped them with lemon drop candies. Heaven in your mouth my friends! Now, normally, I will taste test the frosting, maybe eat one for dessert and then let the kids go wild on the rest. I ate 3 All.By.Myself!!! Don’t tell anyone though. For the newbies here, I’m baking my way through tan amazing cookbook written by Lizzy Early, I picked it up at Sam’s Club for $12 in a moment of weakness. Best buy ever! The strawberry pink lemonade cupcakes are by far my favorite. I have 76 homemade cupcake recipes to go though still, so we’ll see if that changes. But, it’s Summer here in Vegas baby and these are ‘da bomb!
Ok, let’s cut to the chase! Ready to get your homemade cupcake baking on with me?
Strawberry Pink Lemonade Cupcakes
Ingredients
- 1 Box Lemon Cake Mix (I used Betty Crocker)
- 4 Egg Whites
- 1/3 Cup Oil
- 3/4 Cup Milk
- 1 Cup Plain Yogurt
- 1/4 Cup Lemon Juice
- 2 TBSP Lemon Zest
- 1 Cup Butter (softened)
- 1 TSP Vanilla Extract
- 4 TBSP Strawberry Puree
- 4-5 Cups Powdered Sugar
- Cute Decorations!
Instructions
Let's start by preheating your oven to 350*. Find some super cute liners (I use Wilton Color Cups as they hold their color and never turn brown) and line your cupcake pans.
In small bowl, sift cake mix and set aside.
In large mixing bowl, mix egg whites, oil, milk, lemon juice, yogurt and lemon zest on low speed until smooth.
Slowly add your cake mix to the medium bowl and blend until it's smooth and lump free. Remember, lumps are yucky!
As I always say, use a food scoop to pour batter into cupcake liners. It makes it way less messy and no guessing to get them filled the right amount. Fill your liners 3/4 full. Depending on your oven, bake for 15-20 minutes. We were right about to the 17 mark. Use the old 'toothpick comes out clean' trick to test! Now, set those beauties aside on cooling rack. And hey! While they are cooling off, let's make some frosting!
In large mixing bowl, beat the butter for about 2 minutes. Add vanilla extract.Continue to beat until smooth. Don't forget to scrape the sides of the bowl! Now slowly start to add your powdered sugar until it's a slightly thicker consistency than normal.
Blend in strawberry puree (fresh strawberries run through food processor to soup-like consistency) If frosting is too thin, add a tad more powdered sugar a little at a time. Now, go on! Give it a little lick. Tastes heavenly, right??!

Week 9 was the Uh.Maze.Ing Caramel Apple Cupcakes that have literally taken off on Pinterest!
Week 10 was the Orange Cranberry Cupcakes! Sweet and tart perfection!
Week 11 were the festive and lucky Andes Mint Chocolate cupcakes! Oh yeah! I went there!
And, week 12 were the Toasted Coconut Cupcakes. Super delicious, just sayin’…
Week 13 we went and threw down some Milky Way Caramel and Chocolate Brownie Cupcakes.Yeah, totes did it up good too!
Week 14 were the unbelievably delish Dr. Pepper and Chocolate Cherry Cupcakes. I found heaven in those babies!

I would have to give these a 4/10. When i went to bake them, it was as if my oven refused to bake them by breaking down. Once I finally got the oven fixed, the cupcakes were terrible. Terrible recipe. Terrible website.

I am having issues with the icing. The buttercream is astonishing! However, when I add the strawberries it becomes too thin, when I add more sugar, it becomes too sugary and loses its strawberry flavor. Any suggestions?
I realllllly want a strong strawberry flavor but a thick icing.

Hi Lance!!
Here’s a trick I use when frosting goes bust for me… INSTANT PUDDING…. grab a small box of whatever flavor you’re aiming for and a tablespoon at a time add it in rather than powdered sugar. You will loose the ‘flavor’ and only get ‘sickly sweet’ if you go overboard with powdered sugar. The instant pudding will add a bit of thickness and pump back in the flavor… just add small amounts and not the whole pack all at once.
